Antiguan Black Cake, also known as Great Cake, is a traditional dessert from Antigua and Barbuda that is often served during special occasions such as weddings and Christmas. This rich and flavorful cake is made with dried fruits soaked in rum and wine, giving it a unique and indulgent taste.
Ingredients
- 1 pound mixed dried fruits (raisins, currants, prunes)
- 1 cup rum
- 1 cup red wine
- 1 cup butter
- 1 cup brown sugar
- 4 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon mixed spice (cinnamon, nutmeg, allspice)
- 1/2 cup breadcrumbs
- 1/4 cup cherry brandy
Instructions
- In a large bowl, combine the mixed dried fruits, rum, and red wine. Let it soak overnight or for at least 24 hours.
- Preheat the oven to 325°F (165°C). Grease and line a 9-inch round cake pan with parchment paper.
- In a separate bowl, cream the butter and brown sugar until light and fluffy. Beat in the eggs one at a time.
- Sift the flour, baking powder, and mixed spice together. Gradually add the dry ingredients to the creamed mixture, mixing well after each addition.
- Fold in the soaked dried fruits and breadcrumbs. Stir in the cherry brandy.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 2.5 to 3 hours, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
