Ingredients
- 4 cups chicken broth
- 1/2 cup orzo pasta
- 2 eggs
- 1/3 cup fresh lemon juice
- Salt and pepper to taste
Instructions
- In a pot, bring the chicken broth to a boil.
- Add the orzo pasta and cook until tender, about 8-10 minutes.
- In a bowl, whisk together the eggs and lemon juice until frothy.
- Scoop out 1 cup of hot broth from the pot and slowly pour it into the egg mixture, whisking constantly to temper the eggs.
- Pour the egg mixture back into the pot of broth, stirring constantly.
- Cook for another 5 minutes, stirring occasionally, until the soup thickens slightly.
- Season with salt and pepper to taste.
