Ingredients

  • 4 cups chicken broth
  • 1/2 cup orzo pasta
  • 2 eggs
  • 1/3 cup fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. In a pot, bring the chicken broth to a boil.
  2. Add the orzo pasta and cook until tender, about 8-10 minutes.
  3. In a bowl, whisk together the eggs and lemon juice until frothy.
  4. Scoop out 1 cup of hot broth from the pot and slowly pour it into the egg mixture, whisking constantly to temper the eggs.
  5. Pour the egg mixture back into the pot of broth, stirring constantly.
  6. Cook for another 5 minutes, stirring occasionally, until the soup thickens slightly.
  7. Season with salt and pepper to taste.
