Φασολάδα, also known as Greek Fasolada, is a traditional Macedonian cuisine dish that is considered the national dish of Greece. Ingredients
- 1 lb dried white beans, soaked overnight
- 2 onions, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onions, carrots, and celery. Cook until the vegetables are soft, about 10 minutes.
- Add the garlic and cook for another 2 minutes.
- Stir in the soaked white beans, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat to low. Simmer for 1.5 to 2 hours, or until the beans are tender.
- Season with salt and pepper to taste.
