Ingredients

  • 1 lb dried white beans, soaked overnight
  • 2 onions, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions, carrots, and celery. Cook until the vegetables are soft, about 10 minutes.
  2. Add the garlic and cook for another 2 minutes.
  3. Stir in the soaked white beans, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat to low. Simmer for 1.5 to 2 hours, or until the beans are tender.
  4. Season with salt and pepper to taste.
