Greek Gemista (Γεμιστά)
Gemista, also known as stuffed vegetables, is a traditional Greek dish that is popular in Macedonian cuisine. This recipe combines the flavors of fresh vegetables, herbs, and rice, creating a delicious and satisfying meal.
Ingredients
- 4 large tomatoes
- 4 green bell peppers
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of rice
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh mint, chopped
- 1/4 cup of olive oil
- Salt and pepper to taste
- 1 cup of vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and peppers and scoop out the insides, setting aside the pulp and juice.
- In a large bowl, combine the onion, garlic, rice, parsley, mint, olive oil, salt, and pepper. Mix well.
- Stuff the tomatoes and peppers with the rice mixture and place them in a baking dish.
- Pour the vegetable broth over the stuffed vegetables and cover the dish with aluminum foil.
- Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and the rice is cooked.
