Greek Gemista (Γεμιστά)

Gemista, also known as stuffed vegetables, is a traditional Greek dish that is popular in Macedonian cuisine. This recipe combines the flavors of fresh vegetables, herbs, and rice, creating a delicious and satisfying meal.

Greek Gemista (Γεμιστά)

Ingredients

  • 4 large tomatoes
  • 4 green bell peppers
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of rice
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint, chopped
  • 1/4 cup of olive oil
  • Salt and pepper to taste
  • 1 cup of vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and peppers and scoop out the insides, setting aside the pulp and juice.
  3. In a large bowl, combine the onion, garlic, rice, parsley, mint, olive oil, salt, and pepper. Mix well.
  4. Stuff the tomatoes and peppers with the rice mixture and place them in a baking dish.
  5. Pour the vegetable broth over the stuffed vegetables and cover the dish with aluminum foil.
  6. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and the rice is cooked.
