Greek Kleftiko (Κλέφτικο)
Kleftiko is a traditional Greek dish that consists of slow-cooked lamb, marinated in flavorful herbs and spices. The dish is typically cooked in a sealed clay oven, allowing the meat to become incredibly tender and juicy.
Ingredients
- 2 lbs lamb shoulder, bone-in
- 4 cloves garlic, minced
- 1 lemon, juiced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix the minced garlic, lemon juice, olive oil, oregano, thyme, salt, and pepper to create the marinade.
- Place the lamb shoulder in a roasting pan and pour the marinade over the meat, ensuring it is evenly coated.
- Cover the roasting pan with aluminum foil and place it in the preheated oven.
- Cook for 3 hours, or until the lamb is tender and falls off the bone.
- Remove the foil and increase the oven temperature to 400°F (200°C) for an additional 15 minutes to brown the meat.
- Once cooked, remove the lamb from the oven and let it rest for 10 minutes before serving.
