Ingredients

  • 2 lbs lamb shoulder, bone-in
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix the minced garlic, lemon juice, olive oil, oregano, thyme, salt, and pepper to create the marinade.
  3. Place the lamb shoulder in a roasting pan and pour the marinade over the meat, ensuring it is evenly coated.
  4. Cover the roasting pan with aluminum foil and place it in the preheated oven.
  5. Cook for 3 hours, or until the lamb is tender and falls off the bone.
  6. Remove the foil and increase the oven temperature to 400°F (200°C) for an additional 15 minutes to brown the meat.
  7. Once cooked, remove the lamb from the oven and let it rest for 10 minutes before serving.
