Greek Lemon Chicken Skewers With Tzatziki Sauce

Ingredients

  • 1.5 lbs chicken breast, cut into cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 lemons, juiced and zested
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 8 wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the olive oil, garlic, lemon juice and zest, oregano, salt, and pepper. Add the chicken cubes and marinate for at least 30 minutes.
  2. While the chicken is marinating, prepare the tzatziki sauce by combining the Greek yogurt, grated cucumber, dill, lemon juice, salt, and pepper. Refrigerate until ready to serve.
  3. Thread the marinated chicken cubes onto the soaked wooden skewers.
