Ingredients

  • 2 large eggplants, sliced lengthwise
  • 1 lb ground lamb or beef
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup red wine
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sprinkle the eggplant slices with salt and let them sit for 15 minutes to release excess moisture. Pat dry with paper towels.
  3. Heat some olive oil in a large skillet over medium-high heat. Fry the eggplant slices until golden brown. Remove and set aside.
  4. In the same skillet, add the ground meat and cook until browned. Add the onion and garlic, and cook until softened.
  5. Pour in the diced tomatoes and red wine. Season with cinnamon, nutmeg, salt, and pepper. Simmer for 15 minutes.
  6. In a separate saucepan, melt the butter over medium heat. Stir in the flour to make a roux. Gradually whisk in the milk until smooth. Cook until the sauce thickens. Season with salt and pepper.
  7. Arrange half of the eggplant slices in a greased baking dish. Spoon the meat mixture over the eggplant. Top with the remaining eggplant slices. Pour the béchamel sauce over the top and sprinkle with Parmesan cheese.
  8. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and bubbly.
  9. Let the moussaka rest for 10 minutes before serving.
