Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 onion, finely chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups fish or vegetable broth
- 1 cup diced tomatoes
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery, and cook until the vegetables are softened.
- Pour in the fish or vegetable broth and bring to a simmer.
- Add the diced tomatoes and fish fillets to the pot. Simmer for 15-20 minutes until the fish is cooked through.
