Greek Revani (Ρεβανί)

Ingredients

  • 1 cup semolina
  • 1 cup sugar
  • 1 cup plain yogurt
  • 1/2 cup olive oil
  • 1/2 cup shredded coconut
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup slivered almonds
  • 1 cup water
  • 1 cup sugar
  • 1 cinnamon stick
  • 3-4 whole cloves
  • 1 lemon, juiced

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, mix together the semolina, sugar, yogurt, olive oil, shredded coconut, baking powder, and vanilla extract.
  3. Pour the mixture into the prepared baking dish and smooth the top with a spatula.
  4. Press the slivered almonds into the top of the batter.
  5. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  6. While the cake is baking, prepare the syrup. In a saucepan, combine the water, sugar, cinnamon stick, cloves, and lemon juice. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  7. When the cake is done, remove it from the oven and immediately pour the hot syrup over the hot cake.
  8. Allow the cake to cool and absorb the syrup before cutting into diamond-shaped pieces and serving.
