  • 1 large red onion, cut into chunks
  • 2 large bell peppers (red, yellow, or green), cut into chunks
  • 8 skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken cubes and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.
