Ingredients
- 1.5 lbs (700g) boneless, skinless chicken breasts, cut into 1-inch cubes

- Salt and pepper to taste
- 1 large red onion, cut into chunks
- 2 large bell peppers (red, yellow, or green), cut into chunks
- 8 skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken cubes and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, red onion chunks, and bell pepper chunks onto the soaked skewers, alternating the ingredients.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
