Greek Spaghetti

Ingredients

  • 8 oz spaghetti
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh basil, chopped
  • 4 oz feta cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  3. Add the cherry tomatoes and cook for 5-6 minutes, until they start to soften and release their juices.
  4. Stir in the Kalamata olives and cooked spaghetti. Toss everything together until well combined.
  5. Remove from heat and stir in the fresh basil. Season with salt and pepper to taste.
  6. Divide the spaghetti among serving plates and top with crumbled feta cheese.
