Greek Spanakopita (Σπανακόπιτα)
Spanakopita is a traditional Greek savory pastry filled with spinach, feta cheese, and herbs, all encased in layers of crispy phyllo dough. It's a delicious and satisfying dish that can be enjoyed as an appetizer or a main course.
Ingredients
- 1 pound fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup chopped fresh dill
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped green onions
- 4 eggs, lightly beaten
- 1/2 cup olive oil
- 16 sheets phyllo dough
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the chopped spinach, feta cheese, dill, parsley, green onions, and eggs. Mix well.
- Brush a 9x13 inch baking dish with olive oil. Place 8 sheets of phyllo dough in the bottom of the dish, brushing each sheet with olive oil before adding the next.
- Spread the spinach and cheese mixture evenly over the phyllo dough.
- Cover the filling with the remaining 8 sheets of phyllo dough, brushing each sheet with olive oil.
- Score the top layer of phyllo with a sharp knife to create diamond or square shapes.
- Bake in the preheated oven for 45 minutes, or until the spanakopita is golden brown.
- Allow to cool for a few minutes before cutting into portions and serving.
