Greek Spanakopita (Σπανακόπιτα)

Ingredients

  • 1 pound fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped fresh dill
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped green onions
  • 4 eggs, lightly beaten
  • 1/2 cup olive oil
  • 16 sheets phyllo dough
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the chopped spinach, feta cheese, dill, parsley, green onions, and eggs. Mix well.
  3. Brush a 9x13 inch baking dish with olive oil. Place 8 sheets of phyllo dough in the bottom of the dish, brushing each sheet with olive oil before adding the next.
  4. Spread the spinach and cheese mixture evenly over the phyllo dough.
  5. Cover the filling with the remaining 8 sheets of phyllo dough, brushing each sheet with olive oil.
  6. Score the top layer of phyllo with a sharp knife to create diamond or square shapes.
  7. Bake in the preheated oven for 45 minutes, or until the spanakopita is golden brown.
  8. Allow to cool for a few minutes before cutting into portions and serving.
