Ingredients
- 1 pound fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup chopped fresh dill
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 2 eggs, lightly beaten
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound phyllo dough
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the spinach, feta cheese, dill, parsley, green onions, eggs, olive oil, salt, and pepper.
- Layer 6 sheets of phyllo dough in a greased baking dish, brushing each sheet with melted butter.
- Spoon the spinach mixture over the phyllo layers.
- Layer another 6 sheets of phyllo dough on top, brushing each sheet with melted butter.
- Cut the spanakopita into squares or triangles before baking for 45 minutes, or until golden brown.
- Allow to cool for a few minutes before serving.
