Ingredients

  • 1 pound fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped fresh dill
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 2 eggs, lightly beaten
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound phyllo dough
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the spinach, feta cheese, dill, parsley, green onions, eggs, olive oil, salt, and pepper.
  3. Layer 6 sheets of phyllo dough in a greased baking dish, brushing each sheet with melted butter.
  4. Spoon the spinach mixture over the phyllo layers.
  5. Layer another 6 sheets of phyllo dough on top, brushing each sheet with melted butter.
  6. Cut the spanakopita into squares or triangles before baking for 45 minutes, or until golden brown.
  7. Allow to cool for a few minutes before serving.
