Greek Stifado (Στιφάδο)
Στιφάδο (Stifado) is a traditional Greek stew that is rich in flavor and aroma. This hearty dish is made with tender beef, pearl onions, and a sweet and tangy tomato sauce, infused with warm spices like cinnamon and cloves. Ingredients
- 1.5 lbs beef stew meat, cut into chunks
- 1.5 lbs pearl onions, peeled
- 3-4 garlic cloves, minced
- 1 cup crushed tomatoes
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- 2 tbsp honey
- 1 cinnamon stick
- 4-5 whole cloves
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium-high heat.
- Add the beef chunks and brown them on all sides.
- Add the pearl onions and garlic, and sauté until the onions are slightly caramelized.
- Pour in the crushed tomatoes, red wine vinegar, and honey. Stir to combine.
- Add the cinnamon stick, whole cloves, salt, and pepper. Stir well.
- Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove the cinnamon stick and whole cloves before serving.
