Greek Stifado (Στιφάδο)

Ingredients

  • 1.5 lbs beef stew meat, cut into chunks
  • 1.5 lbs pearl onions, peeled
  • 3-4 garlic cloves, minced
  • 1 cup crushed tomatoes
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 tbsp honey
  • 1 cinnamon stick
  • 4-5 whole cloves
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the beef chunks and brown them on all sides.
  3. Add the pearl onions and garlic, and sauté until the onions are slightly caramelized.
  4. Pour in the crushed tomatoes, red wine vinegar, and honey. Stir to combine.
  5. Add the cinnamon stick, whole cloves, salt, and pepper. Stir well.
  6. Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Remove the cinnamon stick and whole cloves before serving.
