Green Banana And Saltfish Salad

Ingredients

  • 2 green bananas
  • 1/2 lb salted codfish
  • 1 onion, thinly sliced
  • 1 tomato, diced
  • 1/4 cup bell pepper, diced
  • 2 tbsp olive oil
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Peel the green bananas and cut them into small cubes. Place them in a pot of boiling water and cook for 10-15 minutes, or until tender. Drain and let cool.
  2. While the bananas are cooking, place the salted codfish in a pot of water and bring to a boil. Simmer for 5-7 minutes to remove excess salt. Drain and flake the fish.
  3. In a large bowl, combine the cooked green bananas, flaked saltfish, onion, tomato, and bell pepper.
  4. Drizzle the olive oil and lime juice over the salad, and toss gently to combine. Season with salt and pepper to taste.
  5. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
