Ingredients
- 2 green bananas
- 1/2 lb salted codfish
- 1 onion, thinly sliced
- 1 tomato, diced
- 1/4 cup bell pepper, diced
- 2 tbsp olive oil
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Peel the green bananas and cut them into small cubes. Place them in a pot of boiling water and cook for 10-15 minutes, or until tender. Drain and let cool.
- While the bananas are cooking, place the salted codfish in a pot of water and bring to a boil. Simmer for 5-7 minutes to remove excess salt. Drain and flake the fish.
- In a large bowl, combine the cooked green bananas, flaked saltfish, onion, tomato, and bell pepper.
- Drizzle the olive oil and lime juice over the salad, and toss gently to combine. Season with salt and pepper to taste.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
