Ingredients
- 4 green bananas
- 1/4 cup red onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1/4 cup cucumber, finely chopped
- 1/4 cup cherry tomatoes, halved
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Bring a pot of water to a boil.
- Add the whole green bananas to the boiling water and cook for 15 minutes, or until tender.
- Remove the bananas from the water and let them cool.
- Peel the bananas and cut them into slices.
- In a large bowl, combine the sliced bananas, red onion, bell pepper, cucumber, cherry tomatoes, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Pour the dressing over the banana mixture and toss gently to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
