Ingredients

  • 4 green bananas
  • 1/4 cup red onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 1/4 cup cucumber, finely chopped
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a boil.
  2. Add the whole green bananas to the boiling water and cook for 15 minutes, or until tender.
  3. Remove the bananas from the water and let them cool.
  4. Peel the bananas and cut them into slices.
  5. In a large bowl, combine the sliced bananas, red onion, bell pepper, cucumber, cherry tomatoes, and cilantro.
  6. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  7. Pour the dressing over the banana mixture and toss gently to combine.
  8. Chill the salad in the refrigerator for at least 30 minutes before serving.
