Ingredients
- 1 pound fresh green beans, trimmed
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup shredded Gruyère cheese
- 1/2 cup breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Blanch the green beans in a pot of boiling salted water for 3-4 minutes, then transfer to an ice bath to stop the cooking process. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
- Gradually whisk in the milk and cook until the sauce thickens, about 5 minutes.
- Remove the sauce from the heat and stir in 3/4 cup of the Gruyère cheese until melted and smooth. Season with salt and pepper.
- Place the blanched green beans in a baking dish and pour the cheese sauce over them.
- Sprinkle the remaining 1/4 cup of Gruyère cheese and breadcrumbs over the top.
- Bake for 20-25 minutes, or until the top is golden and bubbly.
