Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup shredded Gruyère cheese
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Blanch the green beans in a pot of boiling salted water for 3-4 minutes, then transfer to an ice bath to stop the cooking process. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  4. Gradually whisk in the milk and cook until the sauce thickens, about 5 minutes.
  5. Remove the sauce from the heat and stir in 3/4 cup of the Gruyère cheese until melted and smooth. Season with salt and pepper.
  6. Place the blanched green beans in a baking dish and pour the cheese sauce over them.
  7. Sprinkle the remaining 1/4 cup of Gruyère cheese and breadcrumbs over the top.
  8. Bake for 20-25 minutes, or until the top is golden and bubbly.
