Green Bean Soup (bouneschlupp)
Green Bean Soup, also known as Bouneschlupp, is a traditional dish from Luxembourgian cuisine. This hearty and flavorful soup is perfect for a cozy meal on a chilly day.
Ingredients
- 1 lb fresh green beans, trimmed and cut into 1-inch pieces
- 1 large potato, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced potato and green beans to the pot, and pour in the vegetable broth.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the vegetables are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve the green bean soup hot, garnished with a drizzle of cream and some freshly ground black pepper.
