Green Bean Soup (bouneschlupp)

Ingredients

  • 1 lb fresh green beans, trimmed and cut into 1-inch pieces
  • 1 large potato, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the diced potato and green beans to the pot, and pour in the vegetable broth.
  3. Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the vegetables are tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Serve the green bean soup hot, garnished with a drizzle of cream and some freshly ground black pepper.
