Caldo Verde, or Green Broth, is a traditional Portuguese soup made with kale, potatoes, and chorizo. It's a comforting and flavorful dish that is perfect for a cozy night in.

Green Broth (caldo Verde)

Ingredients

  • 4 cups chicken or vegetable broth
  • 3 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 lb chorizo, sliced
  • 1 bunch kale, stems removed and leaves thinly sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the broth over medium heat.
  2. Add the potatoes, onion, and garlic to the pot and simmer until the potatoes are tender, about 15 minutes.
  3. While the potatoes are cooking, brown the chorizo in a separate pan over medium heat.
  4. Once the potatoes are tender, use a potato masher to mash them slightly in the pot.
  5. Add the sliced kale and browned chorizo to the pot and simmer for an additional 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy!
