Green Broth (caldo Verde)
Caldo Verde, or Green Broth, is a traditional Portuguese soup made with kale, potatoes, and chorizo. It's a comforting and flavorful dish that is perfect for a cozy night in.
Ingredients
- 4 cups chicken or vegetable broth
- 3 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/2 lb chorizo, sliced
- 1 bunch kale, stems removed and leaves thinly sliced
- Salt and pepper to taste
Instructions
- In a large pot, heat the broth over medium heat.
- Add the potatoes, onion, and garlic to the pot and simmer until the potatoes are tender, about 15 minutes.
- While the potatoes are cooking, brown the chorizo in a separate pan over medium heat.
- Once the potatoes are tender, use a potato masher to mash them slightly in the pot.
- Add the sliced kale and browned chorizo to the pot and simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
