Ingredients
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons green curry paste
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 red bell pepper, sliced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1/2 cup fresh basil leaves
- 1 package (14 oz) store-bought pie crust
Instructions
- In a large skillet, heat the green curry paste over medium heat for 1 minute.
- Add the chicken and cook until browned, about 5 minutes.
- Pour in the coconut milk and chicken broth, then add the bell pepper and green beans. Simmer for 15 minutes.
- Stir in the fish sauce and brown sugar. Cook for an additional 5 minutes.
- Remove from heat and stir in the fresh basil leaves.
- Preheat the oven to 375°F (190°C).
- Line a pie dish with one pie crust. Pour the green curry mixture into the crust.
- Place the second pie crust on top and crimp the edges to seal. Cut slits in the top crust to vent.
- Bake for 25-30 minutes, or until the crust is golden brown.
- Let the pie cool for 10 minutes before slicing and serving.
