Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons green curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1/2 cup fresh basil leaves
  • 1 package (14 oz) store-bought pie crust

Instructions

  1. In a large skillet, heat the green curry paste over medium heat for 1 minute.
  2. Add the chicken and cook until browned, about 5 minutes.
  3. Pour in the coconut milk and chicken broth, then add the bell pepper and green beans. Simmer for 15 minutes.
  4. Stir in the fish sauce and brown sugar. Cook for an additional 5 minutes.
  5. Remove from heat and stir in the fresh basil leaves.
  6. Preheat the oven to 375°F (190°C).
  7. Line a pie dish with one pie crust. Pour the green curry mixture into the crust.
  8. Place the second pie crust on top and crimp the edges to seal. Cut slits in the top crust to vent.
  9. Bake for 25-30 minutes, or until the crust is golden brown.
  10. Let the pie cool for 10 minutes before slicing and serving.
