Green Fig and Saltfish Symphony is a traditional Trinidad and Tobago dish that combines the unique flavors of salted codfish with boiled green bananas, seasoned with a medley of herbs and spices.
Ingredients
- 1 lb salted codfish, soaked and flaked
- 6 green bananas, peeled and cut into chunks
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 hot pepper, finely chopped
- 1/4 cup chopped cilantro
- 1/4 cup chopped chives
- 1/4 cup olive oil
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Boil the green bananas in salted water until tender, then drain and set aside.
- In a large skillet, heat the olive oil and sauté the onion, garlic, hot pepper, bell pepper, and tomatoes until softened.
- Add the flaked saltfish to the skillet and cook for 5-7 minutes, stirring occasionally.
- Gently fold in the boiled green bananas, cilantro, and chives, then drizzle with lime juice and season with salt and pepper to taste.
