Ingredients

  • 1 lb salted codfish, soaked and flaked
  • 6 green bananas, peeled and cut into chunks

  • 2 cloves garlic, minced
  • 1 hot pepper, finely chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped chives
  • 1/4 cup olive oil
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Boil the green bananas in salted water until tender, then drain and set aside.
  2. In a large skillet, heat the olive oil and sauté the onion, garlic, hot pepper, bell pepper, and tomatoes until softened.
  3. Add the flaked saltfish to the skillet and cook for 5-7 minutes, stirring occasionally.
  4. Gently fold in the boiled green bananas, cilantro, and chives, then drizzle with lime juice and season with salt and pepper to taste.
