Ingredients
- 1 pound fresh spinach
- 1/2 cup fresh basil leaves
- 3 garlic cloves
- 1/2 cup grated Parmesan cheese
- 1/4 cup walnuts
- 1/2 cup evaporated milk
- Salt and pepper to taste
- 1 pound spaghetti noodles
- 2 tablespoons vegetable oil
- 4 eggs
Instructions
- Blanch the spinach in boiling water for 1 minute, then transfer to an ice bath to cool. Squeeze out excess water and set aside.
- In a food processor, combine the blanched spinach, basil, garlic, Parmesan cheese, walnuts, and evaporated milk. Blend until smooth. Season with salt and pepper to taste.
- Cook the spaghetti noodles according to the package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the green sauce and cook for 2-3 minutes, stirring constantly.
- Add the cooked spaghetti to the skillet and toss to coat with the green sauce.
- In a separate pan, fry the eggs to your desired doneness.
- To serve, divide the green noodles among plates and top each serving with a fried egg.
