Green Noodles (tallarines Verdes)

Ingredients

  • 1 pound fresh spinach
  • 1/2 cup fresh basil leaves
  • 3 garlic cloves
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup walnuts
  • 1/2 cup evaporated milk
  • Salt and pepper to taste
  • 1 pound spaghetti noodles
  • 2 tablespoons vegetable oil
  • 4 eggs

Instructions

  1. Blanch the spinach in boiling water for 1 minute, then transfer to an ice bath to cool. Squeeze out excess water and set aside.
  2. In a food processor, combine the blanched spinach, basil, garlic, Parmesan cheese, walnuts, and evaporated milk. Blend until smooth. Season with salt and pepper to taste.
  3. Cook the spaghetti noodles according to the package instructions. Drain and set aside.
  4. In a large skillet, heat the vegetable oil over medium heat. Add the green sauce and cook for 2-3 minutes, stirring constantly.
  5. Add the cooked spaghetti to the skillet and toss to coat with the green sauce.
  6. In a separate pan, fry the eggs to your desired doneness.
  7. To serve, divide the green noodles among plates and top each serving with a fried egg.
