Green Noodles With Beef (tallarines Verdes Con Lomo)

Ingredients

  • 1 pound beef, thinly sliced
  • 1 pound green noodles
  • 1 cup evaporated milk
  • 1 cup fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic
  • 1/2 onion, chopped
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a blender, combine the basil leaves, evaporated milk, Parmesan cheese, garlic, and a pinch of salt. Blend until smooth to make the green sauce.
  2. Cook the green noodles according to the package instructions. Drain and set aside.
  3. Season the beef slices with salt and pepper. In a large skillet, heat the vegetable oil over medium-high heat. Add the beef and cook until browned, about 3-4 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, sauté the chopped onion until translucent. Return the beef to the skillet and pour the green sauce over the beef. Cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Add the cooked green noodles to the skillet and toss to coat with the green sauce. Cook for an additional 2-3 minutes until heated through.
  6. Serve the green noodles with beef hot, garnished with additional Parmesan cheese if desired.
