Green Plantain Lasagna (Lasagna de Plátano Maduro)

Lasagna de Plátano Maduro, or Green Plantain Lasagna, is a traditional Dominican dish that puts a delicious twist on the classic Italian lasagna. Instead of pasta, this recipe uses ripe plantains to create layers of savory goodness.

Green Plantain Lasagna (Lasagna de Plátano Maduro)

Ingredients

  • 4 ripe green plantains, peeled and sliced lengthwise
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onions, bell peppers, and garlic, and cook until softened.
  3. Add the ground beef to the skillet and cook until browned. Season with oregano, cumin, salt, and pepper.
  4. Stir in the tomato sauce and simmer for 5 minutes.
  5. Layer the sliced plantains in a greased baking dish, followed by the meat mixture and a sprinkle of both cheeses. Repeat the layers, ending with a layer of cheese on top.
  6. Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
  7. Let the lasagna rest for 10 minutes before slicing and serving.
