Ingredients

  • 4 green plantains, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the chopped plantains, carrots, and celery to the pot, and cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the soup to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the plantains are tender.
  6. Season the soup with salt and pepper to taste.
  7. Remove the pot from the heat and let the soup cool slightly.
  8. Using an immersion blender, blend the soup until smooth.
  9. Return the pot to the stove and reheat the soup over low heat.
  10. Serve the Sopa de Plátano Verde hot, garnished with chopped cilantro or a drizzle of olive oil if desired.
