Ingredients
- 4 green plantains, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the chopped plantains, carrots, and celery to the pot, and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the plantains are tender.
- Season the soup with salt and pepper to taste.
- Remove the pot from the heat and let the soup cool slightly.
- Using an immersion blender, blend the soup until smooth.
- Return the pot to the stove and reheat the soup over low heat.
- Serve the Sopa de Plátano Verde hot, garnished with chopped cilantro or a drizzle of olive oil if desired.
