Ingredients
- 4 cups of mixed leafy greens (spinach, kale, or collard greens)
- 1 cup of coconut milk
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a pan over medium heat.
- Add the chopped onion and minced garlic, sauté until fragrant.
- Add the mixed leafy greens and cook until wilted.
- Transfer the cooked greens to a blender, add coconut milk, salt, and pepper.
- Blend until smooth and creamy.
- Divide the mousse into serving bowls and refrigerate for at least 1 hour before serving.
