Greens Mousse (muriwo Mousse)

Ingredients

  • 4 cups of mixed leafy greens (spinach, kale, or collard greens)
  • 1 cup of coconut milk
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Add the chopped onion and minced garlic, sauté until fragrant.
  3. Add the mixed leafy greens and cook until wilted.
  4. Transfer the cooked greens to a blender, add coconut milk, salt, and pepper.
  5. Blend until smooth and creamy.
  6. Divide the mousse into serving bowls and refrigerate for at least 1 hour before serving.
