Ingredients
- 2 cups finely chopped mixed greens (spinach, kale, or collard greens)
- 1 small onion, finely chopped
- 2 tomatoes, diced
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup vegetable oil
- 1 cup water
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, mix the chopped greens, onion, and tomatoes.
- In another bowl, combine the cornmeal, flour, baking powder, salt, black pepper, and paprika.
- Add the dry ingredients to the bowl of greens and mix well.
- Add the vegetable oil and water to the mixture and stir until well combined.
- Spoon the mixture into the prepared muffin tin, filling each cup to the top.
- Bake for 25-30 minutes, or until the muffin cups are golden brown on top.
- Remove from the oven and let them cool for a few minutes before serving.
