Ingredients

  • 2 cups finely chopped mixed greens (spinach, kale, or collard greens)

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup vegetable oil
  • 1 cup water

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, mix the chopped greens, onion, and tomatoes.
  3. In another bowl, combine the cornmeal, flour, baking powder, salt, black pepper, and paprika.
  4. Add the dry ingredients to the bowl of greens and mix well.
  5. Add the vegetable oil and water to the mixture and stir until well combined.
  6. Spoon the mixture into the prepared muffin tin, filling each cup to the top.
  7. Bake for 25-30 minutes, or until the muffin cups are golden brown on top.
