Ingredients

  • 2 cups finely chopped mixed greens (spinach, kale, or collard greens)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 1/2 cup grated cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, mix together the chopped greens, flour, baking powder, and salt.
  3. In a separate bowl, beat the eggs, then stir in the milk and olive oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the grated cheese.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
