Greens Muffins (muriwo Muffins)

Ingredients
- 2 cups finely chopped mixed greens (spinach, kale, or collard greens)
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup milk
- 1/4 cup olive oil
- 1/2 cup grated cheese
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, mix together the chopped greens, flour, baking powder, and salt.
- In a separate bowl, beat the eggs, then stir in the milk and olive oil.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the grated cheese.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
