Greenstone Kiwi Meatballs (Kīwai Whakarite)

Ingredients

  • 500g ground beef
  • 1 onion, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1 cup beef broth
  • 2 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. In a large bowl, mix together the ground beef, onion, breadcrumbs, milk, egg, parsley, salt, and black pepper until well combined.
  2. Shape the mixture into meatballs, about 1 inch in diameter.
  3. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 10 minutes.
  4. Pour in the beef broth and bring to a simmer. Cover and cook for 10-15 minutes, or until the meatballs are cooked through.
  5. In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the skillet and cook until the sauce thickens.
  6. Serve the meatballs with the sauce and enjoy!
