Grenadian Callaloo And Saltfish Casserole

Ingredients
- 1 lb saltfish, soaked and flaked
- 2 lbs callaloo, chopped
- 1 onion, diced
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, minced
- 1 cup coconut milk
- 1 cup breadcrumbs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and scotch bonnet pepper, and sauté until the onion is translucent.
- Add the tomatoes and cook for another 2-3 minutes.
- Stir in the callaloo and cook until wilted, about 5 minutes.
- Add the flaked saltfish and coconut milk, and simmer for 10-15 minutes.
- Season with salt and pepper to taste.
- Transfer the mixture to a casserole dish and sprinkle the breadcrumbs on top.
- Bake in a preheated oven at 350°F for 15-20 minutes, or until the top is golden brown.
