Grenadian Callaloo And Saltfish Casserole

Ingredients

  • 1 lb saltfish, soaked and flaked
  • 2 lbs callaloo, chopped
  • 1 onion, diced
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, minced
  • 1 cup coconut milk
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and scotch bonnet pepper, and sauté until the onion is translucent.
  2. Add the tomatoes and cook for another 2-3 minutes.
  3. Stir in the callaloo and cook until wilted, about 5 minutes.
  4. Add the flaked saltfish and coconut milk, and simmer for 10-15 minutes.
  5. Season with salt and pepper to taste.
  6. Transfer the mixture to a casserole dish and sprinkle the breadcrumbs on top.
  7. Bake in a preheated oven at 350°F for 15-20 minutes, or until the top is golden brown.
