Grenadian Coconut Curry Shrimp

Ingredients
- 1 lb (450g) large shrimp, peeled and deveined
- 1 tbsp curry powder
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 can (14 oz) coconut milk
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 2 tbsp chopped fresh cilantro for garnish
Instructions
- In a large skillet, heat some oil over medium heat. Add the onion and cook until softened.
- Add the garlic, curry powder, turmeric, cumin, paprika, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
- Add the bell pepper and cook for another 2-3 minutes.
- Pour in the coconut milk and bring to a simmer.
- Add the shrimp and cook for 5-7 minutes until they turn pink and opaque.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro before serving.
