Grenadian Coconut Curry Tofu

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons coconut oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 1 scotch bonnet pepper, whole (optional for extra heat)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat the coconut oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Stir in the curry powder and cook for 1-2 minutes to toast the spices.
  4. Add the cubed tofu to the skillet and gently toss to coat with the curry mixture.
  5. Pour in the coconut milk and vegetable broth, and add the whole scotch bonnet pepper if using.
  6. Simmer the curry for 15-20 minutes, stirring occasionally, until the sauce has thickened and the tofu is heated through.
  7. Season with salt and pepper to taste.
  8. Remove the scotch bonnet pepper before serving, and garnish with fresh cilantro.
