Grenadian Coconut Curry Tofu

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons coconut oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 can coconut milk
- 1 cup vegetable broth
- 1 scotch bonnet pepper, whole (optional for extra heat)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat the coconut oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Stir in the curry powder and cook for 1-2 minutes to toast the spices.
- Add the cubed tofu to the skillet and gently toss to coat with the curry mixture.
- Pour in the coconut milk and vegetable broth, and add the whole scotch bonnet pepper if using.
- Simmer the curry for 15-20 minutes, stirring occasionally, until the sauce has thickened and the tofu is heated through.
- Season with salt and pepper to taste.
- Remove the scotch bonnet pepper before serving, and garnish with fresh cilantro.
