Ingredients
- 3 lbs goat meat, cut into chunks
- 2 tbsp curry powder
- 1 onion, chopped

- 2 tomatoes, diced
- 2 potatoes, peeled and cubed
- 2 cups coconut milk
- 2 cups water
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
- Add the curry powder and continue to cook for 2-3 minutes, stirring constantly.
- Add the goat meat to the pot and brown on all sides.
- Pour in the coconut milk and water, then add the tomatoes and potatoes. Season with salt and pepper.
- Bring the curry to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the goat meat is tender.
- Adjust the seasoning if needed and serve hot with rice or roti.
