Ingredients
- 1 breadfruit, peeled and cut into chunks
- 1 lb salted meat (beef, pork, or fish)
- 2 cups coconut milk
- 2 onions, sliced
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- 2 sprigs thyme
- 2 scallions, chopped
- 2 cups spinach or callaloo leaves
- 2 cups water
- Salt and pepper to taste
Instructions
- In a large pot, layer the breadfruit, salted meat, onions, garlic, tomatoes, thyme, and scallions.
- Pour the coconut milk and water over the ingredients.
- Cover the pot and bring the mixture to a boil over medium heat.
- Reduce the heat and let the oil down simmer for about 1.5 hours, or until the liquid has evaporated and the ingredients are tender.
- Add the spinach or callaloo leaves and cook for an additional 10 minutes.
- Season with salt and pepper to taste.
