Ingredients

  • 1 breadfruit, peeled and cut into chunks
  • 1 lb salted meat (beef, pork, or fish)
  • 2 cups coconut milk
  • 2 onions, sliced
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 2 sprigs thyme
  • 2 scallions, chopped
  • 2 cups spinach or callaloo leaves
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, layer the breadfruit, salted meat, onions, garlic, tomatoes, thyme, and scallions.
  2. Pour the coconut milk and water over the ingredients.
  3. Cover the pot and bring the mixture to a boil over medium heat.
  4. Reduce the heat and let the oil down simmer for about 1.5 hours, or until the liquid has evaporated and the ingredients are tender.
  5. Add the spinach or callaloo leaves and cook for an additional 10 minutes.
  6. Season with salt and pepper to taste.
