Grenadian Rum And Raisin Cheesecake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup raisins
  • 1/2 cup Grenadian rum
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 4 eggs
  • 1 tsp vanilla extract

Instructions

  1. In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  2. In a small bowl, soak the raisins in Grenadian rum for 30 minutes.
  3. Preheat the oven to 325°F (165°C).
  4. In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Drain the raisins and fold them into the cream cheese mixture. Pour the filling over the crust in the springform pan.
  6. Bake in the preheated oven for 55-60 minutes, or until the center is almost set.
  7. Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
