Ingredients
- 1 lb mixed mushrooms, such as porcini, chanterelle, and oyster mushrooms, sliced
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 3 cups vegetable broth
- 1 bay leaf
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and carrots, and sauté until the vegetables are softened, about 5 minutes.
- Add the mushrooms to the pot and cook until they release their juices and start to brown, about 8-10 minutes.
- Stir in the potatoes, vegetable broth, bay leaf, paprika, salt, and pepper. Bring the stew to a simmer, then reduce the heat to low and cover the pot. Let it cook for 20-25 minutes, or until the potatoes are tender.
- Remove the bay leaf and adjust the seasoning if needed. Serve the Gribna Kapusta hot, garnished with fresh parsley.
