Ingredients
- 1 lb beef heart, cut into 1-inch cubes
- 1/4 cup aji panca paste
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/4 cup red wine vinegar
- Salt and pepper to taste
- 4-6 metal or soaked wooden skewers
Instructions
- In a bowl, combine the aji panca paste, minced garlic, ground cumin, red wine vinegar, salt, and pepper to create the marinade.
- Add the beef heart cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated beef heart cubes onto the skewers.
- Grill the skewers for about 3-4 minutes per side, or until the beef heart is cooked to your desired doneness.
- Remove from the grill and let the skewers rest for a few minutes before serving.
