Ingredients

  • 1 lb beef heart, cut into 1-inch cubes
  • 1/4 cup aji panca paste
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/4 cup red wine vinegar
  • Salt and pepper to taste
  • 4-6 metal or soaked wooden skewers

Instructions

  1. In a bowl, combine the aji panca paste, minced garlic, ground cumin, red wine vinegar, salt, and pepper to create the marinade.
  2. Add the beef heart cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated beef heart cubes onto the skewers.
  5. Grill the skewers for about 3-4 minutes per side, or until the beef heart is cooked to your desired doneness.
  6. Remove from the grill and let the skewers rest for a few minutes before serving.
