Grilled Chicken Egg Rolls (pollo Asado Egg Rolls)
These Grilled Chicken Egg Rolls, also known as Pollo Asado Egg Rolls, are a delicious fusion of Puerto Rican and Chinese cuisines. They are packed with flavorful grilled chicken and vegetables, wrapped in a crispy egg roll wrapper.
Ingredients
- 1 pound grilled chicken, shredded
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
- 12 egg roll wrappers
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, combine the shredded chicken, cabbage, carrots, and cilantro.
- In a small bowl, mix together the soy sauce, sesame oil, garlic powder, cumin, salt, and black pepper. Pour this mixture over the chicken and vegetable mixture, and toss to combine.
- Place an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 1/4 cup of the chicken and vegetable filling onto the center of the wrapper.
- Roll the bottom corner over the filling, then fold in the sides, and continue rolling tightly. Moisten the top corner with water to seal the egg roll. Repeat with the remaining wrappers and filling.
- In a large skillet, heat vegetable oil over medium heat. Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
- Serve the grilled chicken egg rolls hot with your favorite dipping sauce.
