Grilled Chicken Skewers, known as Anticuchos de Pollo, are a popular dish in Peruvian-Chinese cuisine. The combination of marinated chicken and flavorful spices makes this dish a delicious and unique addition to any meal.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup soy sauce
- 1/4 cup red wine vinegar
- 3 garlic cloves, minced
- 1 tablespoon paprika
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup vegetable oil
- 1 red onion, cut into 1-inch pieces
- 1 bell pepper, cut into 1-inch pieces
- 8-10 wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the soy sauce, red wine vinegar, minced garlic, paprika, cumin, oregano, black pepper, cayenne pepper, and vegetable oil. Add the chicken cubes and marinate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, red onion, and bell pepper onto the soaked wooden skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Serve the grilled chicken skewers hot with aji verde (green chili sauce) and boiled potatoes.
