Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 1/4 cup red wine vinegar
  • 3 garlic cloves, minced
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup vegetable oil
  • 1 red onion, cut into 1-inch pieces
  • 1 bell pepper, cut into 1-inch pieces
  • 8-10 wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the soy sauce, red wine vinegar, minced garlic, paprika, cumin, oregano, black pepper, cayenne pepper, and vegetable oil. Add the chicken cubes and marinate for at least 1 hour, or overnight for best results.
  2. Preheat the grill to medium-high heat.
  3. Thread the marinated chicken, red onion, and bell pepper onto the soaked wooden skewers.
  4. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  5. Serve the grilled chicken skewers hot with aji verde (green chili sauce) and boiled potatoes.
