Grilled Chicken with Yassa Sauce (Poulet Grillé à la Sauce Yassa)

Ingredients
- 4 chicken leg quarters
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 lemons, juiced
- 1/2 cup vegetable oil
- 2 tablespoons Dijon mustard
- 1 tablespoon white vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the onions, garlic, ginger, lemon juice, vegetable oil, Dijon mustard, white vinegar, salt, and pepper to make the Yassa sauce.
- Add the chicken leg quarters to the bowl and coat them with the Yassa sauce. Marinate for at least 30 minutes, or preferably overnight in the refrigerator.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for about 20-25 minutes on each side, or until fully cooked and charred on the outside.
- While grilling, baste the chicken with the remaining Yassa sauce to keep it moist and flavorful.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before serving.
