Grilled Eggplant Rolls (Karnıyarık)

Ingredients

  • 2 large eggplants
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the eggplants lengthwise into thin slices, brush with olive oil, and grill for 3-4 minutes on each side until tender. Set aside to cool.
  3. In a skillet, cook the ground meat and onions until browned. Add the tomatoes, garlic, paprika, cumin, salt, and pepper. Cook for 5-7 minutes, then remove from heat.
  4. Place a spoonful of the meat mixture onto each grilled eggplant slice and roll it up. Secure with toothpicks if needed.
  5. Place the stuffed eggplant rolls in a baking dish, cover with foil, and bake in the oven at 350°F for 20 minutes.
  6. Serve the Karnıyarık hot, garnished with fresh herbs if desired.
