Grilled Eggplant Rolls (Karnıyarık)
Karnıyarık is a traditional Crimean Tatar dish that consists of grilled eggplant rolls filled with a savory mixture of ground meat, onions, and spices. This flavorful and satisfying dish is a staple in Crimean Tatar cuisine.
Ingredients
- 2 large eggplants
- 1 lb ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the grill to medium-high heat.
- Cut the eggplants lengthwise into thin slices, brush with olive oil, and grill for 3-4 minutes on each side until tender. Set aside to cool.
- In a skillet, cook the ground meat and onions until browned. Add the tomatoes, garlic, paprika, cumin, salt, and pepper. Cook for 5-7 minutes, then remove from heat.
- Place a spoonful of the meat mixture onto each grilled eggplant slice and roll it up. Secure with toothpicks if needed.
- Place the stuffed eggplant rolls in a baking dish, cover with foil, and bake in the oven at 350°F for 20 minutes.
- Serve the Karnıyarık hot, garnished with fresh herbs if desired.
