Grilled Fish Cake (Papar Otak-Otak) is a popular dish in Sabahan Cuisine, known for its flavorful and aromatic grilled fish mixture. This dish is perfect for seafood lovers and can be enjoyed as a snack or a main course.
Ingredients
- 500g white fish fillets, such as mackerel or snapper
- 2 tbsp red curry paste
- 1 egg
- 1/4 cup coconut milk
- 1/4 cup finely chopped green beans
- 1/4 cup finely chopped red bell pepper
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped cilantro
- 1/4 cup finely chopped kaffir lime leaves
- 1 tbsp fish sauce
- 1 tbsp sugar
- 1/2 tsp salt
- 1/4 tsp ground white pepper
- Banana leaves for wrapping
Instructions
- In a food processor, blend the fish fillets and red curry paste until smooth.
- Transfer the fish mixture to a bowl and add the egg, coconut milk, green beans, red bell pepper, onion, cilantro, kaffir lime leaves, fish sauce, sugar, salt, and white pepper. Mix well.
- Cut the banana leaves into 8-inch squares and briefly pass them over an open flame to soften.
- Place a portion of the fish mixture onto each banana leaf square and wrap into a tight parcel.
- Grill the fish cakes over medium heat for 5-7 minutes on each side, or until cooked through.
- Serve the grilled fish cakes hot with steamed rice and a side of sambal.
