Grilled Fish Cake (papar Otak-otak)

Ingredients

  • 500g white fish fillets, such as mackerel or snapper
  • 2 tbsp red curry paste
  • 1 egg
  • 1/4 cup coconut milk
  • 1/4 cup finely chopped green beans
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped cilantro
  • 1/4 cup finely chopped kaffir lime leaves
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • Banana leaves for wrapping

Instructions

  1. In a food processor, blend the fish fillets and red curry paste until smooth.
  2. Transfer the fish mixture to a bowl and add the egg, coconut milk, green beans, red bell pepper, onion, cilantro, kaffir lime leaves, fish sauce, sugar, salt, and white pepper. Mix well.
  3. Cut the banana leaves into 8-inch squares and briefly pass them over an open flame to soften.
  4. Place a portion of the fish mixture onto each banana leaf square and wrap into a tight parcel.
  5. Grill the fish cakes over medium heat for 5-7 minutes on each side, or until cooked through.
  6. Serve the grilled fish cakes hot with steamed rice and a side of sambal.
