Ingredients
- 4 pieces of fresh fish (such as snapper or mackerel)
- 5 shallots, peeled
- 3 cloves of garlic, peeled
- 2 red chilies, deseeded
- 1 inch of fresh turmeric, peeled
- 1 lemongrass stalk, white part only
- 1 teaspoon of tamarind paste
- 1 teaspoon of salt
- 2 tablespoons of vegetable oil
Instructions
- Prepare the fish by cleaning and scoring the flesh to allow the marinade to penetrate.
- In a food processor, blend shallots, garlic, red chilies, turmeric, lemongrass, tamarind paste, and salt to form a smooth paste.
- Heat the vegetable oil in a pan and sauté the spice paste until fragrant.
- Marinate the fish with the spice paste and let it sit for at least 30 minutes.
- Preheat the grill and grill the fish for about 6-8 minutes on each side, or until cooked through.
