Ingredients

  • 4 pieces of fresh fish (such as snapper or mackerel)
  • 5 shallots, peeled
  • 3 cloves of garlic, peeled
  • 2 red chilies, deseeded
  • 1 inch of fresh turmeric, peeled
  • 1 lemongrass stalk, white part only
  • 1 teaspoon of tamarind paste
  • 1 teaspoon of salt
  • 2 tablespoons of vegetable oil

Instructions

  1. Prepare the fish by cleaning and scoring the flesh to allow the marinade to penetrate.
  2. In a food processor, blend shallots, garlic, red chilies, turmeric, lemongrass, tamarind paste, and salt to form a smooth paste.
  3. Heat the vegetable oil in a pan and sauté the spice paste until fragrant.
  4. Marinate the fish with the spice paste and let it sit for at least 30 minutes.
  5. Preheat the grill and grill the fish for about 6-8 minutes on each side, or until cooked through.
