Grilled Fish Skewers, known as Anticuchos de Pescado, are a popular dish in Peruvian Chinese cuisine. The combination of fresh fish and flavorful marinade makes this dish a delicious and healthy option for any occasion.
Ingredients
- 1 lb firm white fish, such as halibut or cod, cut into 1-inch cubes
- 1/4 cup soy sauce
- 2 tablespoons aji amarillo paste
- 2 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1/4 cup vegetable oil
- Salt and pepper to taste
- 8 bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine soy sauce, aji amarillo paste, garlic, cumin, paprika, and vegetable oil. Season with salt and pepper.
- Add the fish cubes to the marinade and toss to coat. Let marinate for 15 minutes.
- Thread the marinated fish onto the soaked bamboo skewers.
- Preheat the grill to medium-high heat. Grill the fish skewers for 3-4 minutes per side, or until the fish is cooked through and has grill marks.
- Serve the grilled fish skewers hot, garnished with lime wedges and accompanied by aji amarillo sauce for dipping.
