Grilled Fish Skewers (anticuchos De Pescado)

Ingredients

  • 1 lb firm white fish, such as halibut or cod, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tablespoons aji amarillo paste
  • 2 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1/4 cup vegetable oil
  • Salt and pepper to taste
  • 8 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine soy sauce, aji amarillo paste, garlic, cumin, paprika, and vegetable oil. Season with salt and pepper.
  2. Add the fish cubes to the marinade and toss to coat. Let marinate for 15 minutes.
  3. Thread the marinated fish onto the soaked bamboo skewers.
  4. Preheat the grill to medium-high heat. Grill the fish skewers for 3-4 minutes per side, or until the fish is cooked through and has grill marks.
  5. Serve the grilled fish skewers hot, garnished with lime wedges and accompanied by aji amarillo sauce for dipping.
