Grilled Glutinous Rice (pulut Panggang Delight)
Grilled Glutinous Rice (Pulut Panggang Delight) is a traditional Bruneian dish that is both savory and satisfying. This recipe combines the rich flavors of glutinous rice, coconut milk, and aromatic pandan leaves, all wrapped in banana leaves and grilled to perfection.
Ingredients
- 2 cups glutinous rice, soaked for 4 hours
- 1 cup coconut milk
- 1/2 cup sugar
- 1/2 teaspoon salt
- 6 pandan leaves, knotted
- Banana leaves, cut into 6 pieces (about 12x12 inches each)
Instructions
- Drain the soaked glutinous rice and place it in a large bowl.
- In a small saucepan, heat the coconut milk, sugar, and salt over low heat until the sugar is dissolved. Pour the mixture over the glutinous rice and stir to combine.
- Place a knotted pandan leaf on each piece of banana leaf. Spoon a portion of the glutinous rice mixture onto the pandan leaf.
- Wrap the banana leaf around the rice to form a neat parcel and secure with toothpicks.
- Grill the parcels over medium heat for 15-20 minutes on each side, or until the rice is cooked through and the banana leaves are slightly charred.
- Remove from the grill and let cool for a few minutes before unwrapping and serving.
