Grilled Glutinous Rice With Spiced Filling (pulut Panggang)

Ingredients

  • 3 cups glutinous rice, soaked overnight
  • 1 cup coconut milk
  • 1 teaspoon salt
  • 1/2 cup dried shrimp, soaked and finely chopped
  • 1/2 cup grated coconut
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon sugar
  • Banana leaves, cut into 12 pieces (optional)

Instructions

  1. In a large bowl, mix the soaked glutinous rice, coconut milk, and salt. Set aside.
  2. In a separate bowl, combine the dried shrimp, grated coconut, shallots, garlic, chili paste, turmeric powder, and sugar to make the spiced filling.
  3. Take a piece of banana leaf and place a small portion of the glutinous rice mixture on it. Flatten the rice and add a spoonful of the spiced filling in the center. Fold the banana leaf to form a small parcel. Repeat for the remaining rice and filling.
  4. Grill the parcels over medium heat for about 15-20 minutes on each side, or until the rice is cooked and the filling is fragrant.
  5. Once cooked, remove the parcels from the grill and let them cool slightly before serving.
