Ingredients
- 4 lobster tails
- 1 cup coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Cut the lobster tails in half lengthwise and season with salt and pepper.
- Grill the lobster tails for 5-7 minutes on each side, until the meat is opaque and slightly charred.
- In a saucepan, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and cook until softened.
- Stir in the red curry paste and cook for 1 minute.
- Pour in the coconut milk, fish sauce, and brown sugar. Simmer for 5 minutes, until the sauce thickens slightly.
