Grilled Minced Meat Rolls (mititei)

Ingredients

  • 500g minced beef
  • 500g minced pork
  • 2 garlic cloves, minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/4 teaspoon baking soda
  • 1/4 cup sparkling water

Instructions

  1. In a large bowl, mix together the minced beef, minced pork, garlic, black pepper, salt, paprika, thyme, oregano, cumin, and baking soda.
  2. Add the sparkling water to the meat mixture and knead it for 5 minutes until the mixture becomes sticky.
  3. Cover the bowl with plastic wrap and refrigerate for 1 hour.
  4. Preheat the grill to medium-high heat.
  5. Divide the meat mixture into small portions and shape them into rolls or sausages.
  6. Grill the minced meat rolls for 10-12 minutes, turning occasionally, until they are cooked through and have a nice charred exterior.
  7. Remove from the grill and let them rest for a few minutes before serving.
