Ingredients
- 1 whole Pacú fish, cleaned and scaled
- 2 tomatoes, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 1/4 cup vegetable oil
- 1/4 cup vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Make diagonal cuts on both sides of the fish and season with salt and pepper.
- Stuff the fish with sliced tomatoes, onions, garlic, and bell pepper.
- In a small bowl, mix vegetable oil, vinegar, salt, and pepper. Brush the mixture over the fish.
- Grill the fish for 7-8 minutes on each side or until the flesh is opaque and flakes easily with a fork.
- Remove from the grill and let it rest for a few minutes before serving.
