Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into chunks
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground saffron threads, dissolved in 2 tablespoons hot water
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, cut into chunks

Instructions

  1. In a large bowl, combine the yogurt, olive oil, minced garlic, dissolved saffron, turmeric, cumin, salt, and black pepper. Mix well to combine.
  2. Add the chicken chunks to the marinade and toss to coat. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken chunks and onion onto skewers.
  4. Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
  5. Remove the skewers from the grill and let them rest for a few minutes before serving.
