Grilled Saffron Chicken Skewers, also known as Iranian Joojeh Kabab, are a delicious and aromatic dish from Eastern Arabian cuisine. The chicken is marinated in a flavorful saffron and yogurt mixture, then grilled to perfection, resulting in tender and juicy skewers that are bursting with flavor.
Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into chunks
- 1 cup plain yogurt
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground saffron threads, dissolved in 2 tablespoons hot water
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, cut into chunks
Instructions
- In a large bowl, combine the yogurt, olive oil, minced garlic, dissolved saffron, turmeric, cumin, salt, and black pepper. Mix well to combine.
- Add the chicken chunks to the marinade and toss to coat. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken chunks and onion onto skewers.
- Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
